Hedvábný a vyvážený šálek s jemnou ovocnou sladkostí, citrusovou kůrou a dlouhým oříškovým závěrem.

Tato káva pochází od drobných pěstitelů z provincie San Ignacio v peruánském departementu Cajamarca. Pěstují především odrůdy Catimor, Pache a Typica. Sklizeň probíhá podle přísných kritérií zralosti, následuje plavení a ruční třídění k odstranění všech vad. Třešně jsou zbaveny dužiny a procházejí 20 až 30hodinovou fermentací. Poté je pergamenová slupka jemně omyta a umístěna do stínu k sušení, což trvá 15 až 20 dní, dokud není dosaženo ideální vlhkosti.
