Questa miscela messicana offre un'acidità brillante di frutta verde bilanciata da una dolcezza simile alla marmellata in chiusura.

Alla fine del 1800, il presidente messicano Porfirio Díaz voleva modernizzare il Messico e attrarre capitali, competenze e coloni europei. Parte di questa iniziativa prevedeva l'invito di oltre 450 famiglie tedesche a trasferirsi nella regione del Soconusco, nel Messico meridionale, per coltivare caffè. Circa il 70% del caffè prodotto qui veniva esportato in Germania. La Finca Guadelupe Zaju porta avanti questa eredità ed è stata di proprietà di famiglie tedesche fino al 2003, quando è stata acquistata dall'attuale proprietario, Teddy Esteve.
