Finca Gascon is ran by Felipe Contreras, who inherited the responsibility from his father Gildardo. Gildardo was involved with coffee since childhood. He recalls helping his parents pick and process coffee from the bourbon trees in his back garden. These decades of experience are reflected in the high-quality processing showcased by this coffee. Honey processing is often described using colour terms indicating how much mucilage is left on the parchment during drying; black honey, used here, retains the most.
